Gopherus polyphemus is uitsluitend een planteneter. Soms wordt er wel melding gemaakt van Gopherus polyphemus die aan botten van zoogdieren knagen, dit is hoogst waarschijnlijk om extra calcium binnen te krijgen. Hoofdzakelijk eten ze korte grassen en korte onkruiden. Ook wordt de bloem, vrucht en schijven van de Opuntia cactus gegeten. Gopherus polyphemus is een belangrijke verspreider van de zaden van deze voedselplanten in Florida via zijn mest.
